
Honey Cake quick recipe

Bake a Rice Flour Honey Cake at home. A quick recipe which is too yummy to resist.

Cakes are favorite among kids. But this Honey Cake, I bet you can’t resist to bake again and again.
How to Bake Rice Flour Honey Cake
Ingredients
- 3 Eggs
- 3/4 cup Honey
- 1 cup Sugar
- 1 cup Oil or Butter
- 1 tsp Baking soda
- 1 tsp Baking powder
- Vanilla extract
- 2 tsp Instant Coffee Powder
- 1 cup Almond or Soy Milk or Normal Milk
- 1 cup Coconut Flour (optional)
- 1 1/4 cup Rice Flour
- 1/2 tsp Xanthum Gum (optional)
- Dry fruits (roasted and crushed) (optional)
- Dried cherries, cranberries (optional)
Method:
Preparation is easy, just remember mix dry ingredients and wet ingredients separately.
Dip dry fruits in some milk for few hours. Say about half a cup of milk. Or less as per quantity of dry fruits.
First start with mixing dry ingredients but not sugar.
Mix flour, Coffee powder, baking soda, baking powder. Mix well and keep aside.
Coat baking tray with butter or oil and spread flour to coat, keep aside.
Ready the oven: pre heat oven at 180 degrees
While oven is heating start beating eggs. Than add sugar mix well, than add oil or butter whichever you are using along with vanilla extract.
Now add Honey
Mix it well again.
Now start adding mixture of dry ingredients in small portion along with 1-2 TB spoon milk along each portion of dry ingredients. While you add dry ingredients give a smooth mix with spatula. Do not use blender or mixer.
Your mixture will turn into thick batter, that’s a good sign.
Now add dry fruits (before adding dust than with flour). Just do couple of cut and folds.
Transfer your batter into the baking tray and give a tap or two to remove trapped air, if any. Keep the try in oven for about 30 – 40 minutes. Depending upon quantity it will be ready in 30-40 minutes.
You can test if it is done or not, by inserting a toothpick or a knife to full depth and pull out. If it comes clean than your Yummy Rice Flour Honey Cake is ready.
Take out the baking tray, let it cool a bit for about 15 minutes, take a knife and loose it edges. Then turn it on a plate and there you go.
Add toppings, season with cream, custard, more dry fruits, nuts, berries.
Serve the Honey Cake when cool or little warm – with tea Coffee.
Note that your batter should not be runny, it should be thick batter. Also it should not be too thick like you kneed flour.
If something goes wrong – do not panic. Add flour or milk to set the batter to required thickness. Do not add too much milk.
